CHILLI CRAB SPAGHETTI
by Neil Clifton
One of my fondest memories of crab, is sitting at a run down crab shack somewhere near the Gulf of Mexico and watching my dad eat his "bottomless bucket of crab." It was all you can eat for less than $20.
I didn't enjoy it at the time, I had eaten my ribs and had to wait another 2hrs watching him eat the crab, (I didnt even have a phone or Ipad to keep me occupied).
I didnt get it then, I do now - I try to eat fresh crab as much as possible - it's difficult living in The Midlands but not impossible. The best I have ever had is (no surprise) a hen crab at Prawn On The Lawn in Padstow. Anyway - here is very simple but incredibly flavoursome crab and spaghetti dish.
INGREDIENTS
2 Cloves of garlic
2 Fresh red chilli
2 tsp olive oil
100g brown crab meat
250g white crab meat
Handful of spaghetti
METHOD
1. In a pestle and mortar crush the chilli and garlic.
2. Add oil, brown and white crab meat.
3. Boil the spaghetti as per the instructions.
4. Combine spaghetti, and crab mix, while warm and serve immediately
HINTS & TRICKS
A foodie friend of mine adds a shot of vermouth when serving up. Add some Parmesan cheese to for an extra kick and it is superb.
