BOOKS I USE

by Neil Clifton

I have a large amount of cookery books, mainly purchased off Amazon, second hand. Sometimes the pages would be covered in the previous owners attempts at cooking! These are a handful of my favourites - in no particular order.

PRAWN ON THE LAWN

I couldn't start off my recommended book section with anything else. A fabulous collection of recipes from their restaurants - you can check out my attempt at their Vietnamese monkfish tail here.

ETXEBARRI

An unbelievable, in depth guide to what is widely regarded to be the best BBQ restaurant in the World. The book takes up more pages on fire than it does on recipes.

FRENCH COOKING

I found this book in a villa, while we were on holiday in Moraira in 1996 - I had never been so excited to get home and try out some of the recipes - and buy my own copy.

PITT CUE

Without doubt one of the first team to serve "proper" BBQ food in The UK, I was lucky to visit the first week of their opening and had a tour of the kitchen, well, not really a tour more of a peak through the door because anymore than 2 people in there and there was no turning space! But the dishes they knocked out of there were and are still an inspiration for me.
